Pistachio Cookie — Ingredients

• 1 cup (2 sticks) unsalted butter, softened

• 1 cup granulated sugar

• 1/2 cup light brown sugar, packed

• 2 large eggs, at room temperature

• 1 teaspoon pure vanilla extract

• 2 1/2 cups all-purpose flour

• 1/2 teaspoon baking soda

• 1/2 teaspoon baking powder

• 1/2 teaspoon fine sea salt

• 1 cup finely ground pistachios (shelled, unsalted)

• 1/2 cup coarsely chopped pistachios, for texture and topping

• 2 tablespoons milk or heavy cream (optional, for softer dough)
